1 lb. cooked meat of your choice (brisket, chicken, turkey, beef - cubed, sliced or shredded)
2 large baked sweet potatoes
2 cups of various vegetables (zucchini, squash, carrots, onions)
Sea salt and pepper to taste
Extra-Virgin Olive Oil
Sautee the vegetables in extra-vigin olive oil. Season with sea salt and black pepper. Sautee until just soft about 5 minutes.
Spread the cooked protein in the casserole then layer the veggies on top. Scoop out the sweet potatoes with a spoon and spread it over the veggies. Place in oven at 350 degrees for 15 minutes.
Option: Make individual portions by layering the protein, veggies and potato in ramikens and put in refrigerator. This will make it easy to re-heat whether at home or away.
